One of the things I love about this meal is that it is so adaptable. If you don't have (or don't like) something that the recipe calls for, chances are it will be just fine without it! Work with what you've got. For example, corn isn't typically in the recipe, but I had some on hand so I just threw it in and it was delicious. Anything that you typically enjoy in tacos or on nachos should work just fine in this dish.
Here's the original recipe, take it and make it your own!
2 cans refried beans (sometimes I use one can refried one can black... like I said, adaptable!)
1 lb. hamburger meat
1 package taco seasoning
1 small jar of your favorite salsa
tomatoes
green onion
1 can olives, sliced
shredded cheese to preference (I probably use around 2 1/2 cups)
sour cream
chips
Preheat oven to 350 degrees. In a skillet cook hamburger meat and season with taco seasoning. Grease a 9x13 baking dish and layer beans, meat, salsa, tomatoes, green onion, olives and cheese. Heat in oven until warm through and cheese is melted (about 30 minutes). Serve warm with chips and sour cream.
Another great thing about this recipe is that you can prepare it early in the day (like while your son is napping, for example) and then pull it out and heat it up as soon as your ready to eat. Can't beat that, right?
