10 Easy Weeknight Meals I Keep Stocked in My Pantry


If you follow the blog then you know that recently I have discovered freezer cooking and I am completely obsessed! There is no better feeling in the world on a busy day than making dinner without having to actually make a thing. However, because I love freezer meals so much sometimes it seems like they disappear faster than I can make them. So, in addition to my freezer meals I always keep ingredients for my "go-to" easy weeknight dinners stocked in my pantry and freezer.

Today, I am going to share my top ten favorite recipes that I keep stocked with links to recipes. Also, I have broken down each recipe into what you need in your pantry, what you need in your freezer, and what you would need fresh (fresh items are minimal in these recipes so that you can keep them on hand all the time.)

Easy Sweet and Sour Chicken
Pantry: apricot or peach preserves, catalina salad dressing, 1 package onion soup mix
Freezer: chicken breasts

My Creamy Chicken Enchiladas
Pantry: 2 cans shredded chicken breast, 1 can cream of chicken soup, 1 can green enchilada sauce, chili powder, garlic powder
Freezer: shredded cheese, green onion
Fresh: tortillas, sour cream

Homemade Fried Rice
Pantry: rice, oil, 1 fried rice packet, soy sauce
Freezer: meat of choice, peas, green onion
Fresh: eggs, minced garlic

Shredded Chicken Tacos 
Pantry: 1 packet taco seasoning, 1 jar of your favorite salsa
Freezer: chicken breasts

Super Nachos
Pantry: 2 cans refried or black beans, 1 package taco seasoning, 1 jar of your favorite salsa, 1 can olives, tortilla chips
Freezer: 1 lb. hamburger meat, green onion, shredded cheese
Fresh: tomatoes, sour cream

Creamy Chicken Italiano 
Pantry: noodles, 1 pkg dry itialian seasoning, 1 can cream of chicken soup
Freezer: chicken breasts
Fresh: 1 8oz package of cream cheese 

Asian Glazed Chicken Drumsticks
Pantry: olive oil, sriracha hot sauce, balsamic vinegar, soy sauce, sugar, chives, sesame seeds
Freezer: 8 chicken drumsticks 
Fresh: ginger

Taco Soup
Pantry: minced onion, 1 packet taco seasoning, 1 can kidney beans, 1 can pinto or black beans, 1 can corn, 2 cans stewed tomatoes
Freezer: 1 lb. ground hamburger
Fresh: sour cream and cheese to garnish (optional)

Tater Tot Casserole
Pantry: 1 package taco seasoning, 2 cans cream of chicken soup, 1 can evaporated milk, minced onion
Freezer: 1 1/2 lbs ground beef,  1 bag of frozen Oreida tater tots, shredded cheese

Honey Barbecued Ribs
Pantry: garlic salt, ketchup, brown sugar, honey, spicy brown mustard, Worcestershire sauce, liquid smoke
Freezer: 3 lbs boneless pork ribs

So there you have it! If you are like me you have most of the "pantry" items already, so with a bit of organization it should be really simple to have tons of ready to go options for delicious dinners! What are your go-to weeknight meals?
