My Version of a BLT Pasta Salad

I love BLT's. Oh so much. It feels like we eat them at least once a week, because husband loves them too. You would think I would love BLT pasta salad...not so much. I don't love salads of any kind that are coated in mayo (and most BLT salads are). Furthermore, I don't love mixing lettuce and pasta in the same dish, with rare exceptions. So, I made up my own "BLT" based pasta salad that avoided the aforementioned things. I hope you will think it is yummy whether you like traditional BLT pasta salad or not!

You will need:

A handful of grape or cherry tomatoes or 2-3 roma tomatoes
5 pieces of bacon or a bag of bacon bits
1/3 cup diced purple onion
1/2 cup Parmesan cheese
16 oz small pasta shells
1/3 cup light ranch dressing
1/3 cup your favorite Italian dressing

Cook pasta as directed on your package. Drain pasta and rinse with water to cool. At this point I usually add the dressings to the pasta and stick that in the fridge to "marry" and chill while I get the other ingredients ready. Then chop your onions, tomatoes, and bacon if needed. Stir all ingredients into pasta salad and enjoy!



*Note, this much dressing will barely coat your noodles, which is how I like it. If you prefer more dressing, just add to taste!

  2. I made the other BLT pasta salad and I hated the lettuce in it. It wilted and was slimy and gross. The mayo was okay because it was mixed with sour cream so it almost tasted like ranch dressing. I'm going to try this one. It sounds much better!

  6. Visiting from Sew Can Do... nice twist on an old fav! Have you considered using large leaves of lettuce and make lettuce wraps with this salad? Best of both worlds without soggy lettuce!
