I am in love with Jamba Juice. I swear I could eat there every day. Unfortunately, they don't have a location where I live. (What the heck?!) It is so hot here I crave one once a day...at least.
Anyway one of my favorite smoothies is the chunky strawberry topper. So, this week I made it my mission to make my own version, and I think I did pretty well! I love the unexpected marriage of strawberries and peanut butter. I feel like that extra protein gives me the burst I need in the mornings these days.
Here's my recipe:
1/4 cup oats
1/2 cup yogurt (I used strawberry but you could sub for plain, vanilla or peach)
1 frozen banana
1 cup frozen strawberries
1 heaping spoon of peanut butter (I use chunky, of course!)
1/2 cup milk
granola and fresh banana to top
Put all ingredients in blender, reserving granola and fresh banana. If you don't have a frozen banana you can substitute a fresh banana and a few ice cubes. Divide into two cups and add granola and fresh banana.
I love everything about this smoothie, but here are two of my favorite things: number one, it is so thick and delicious. Second, no added sugar!
Woo hoo for delicious healthfulness.

ReplyDeleteGreat post. I found this through the Create and Inspire linky party. I linked in a rhubarb and banana jam I did to use up old bananas.
