Post-Vacation Meal Plan


Hello everyone! I just got home from the big vacation I went on with my extended family. My Grandpa treated all of his children and grandchildren to a seven day cruise in the Caribbean! That's 37 of us... wow! It was incredible to say the least. Since we all know that cruise is just the short word for "seven day unlimited buffet of delicious food" we came home feeling like we need to eat much more lightly for a little bit to get back to feeling normal. I have a hard time eating healthy though, it has to taste good or I just end up eating brownies for every meal. Yesterday I went to do our weekly grocery shopping, spent $20.65 on what you see in the picture and made a meal plan for the week based on what I got. I am also going to share a few snapshots from the trip!


Shopping list: red potatoes, deli roast beef & turkey, romaine lettuce, spinach, oatmeal, bananas, kiwi, mangoes, baby carrots, apples & skim milk. I already had eggs, frozen chicken breasts, broccoli & strawberries, wheat bread, brown minute rice and some canned peaches which I also incorporated into the plan.

You may notice that there is a lot of Peanut Butter and Banana combinations on this list... that's because it is the best combo in the world in my humble opinion and a little bit of peanut butter goes a long way in making "diet food" taste delicious. The rest are just really basic meals but it's light stuff that I actually like to eat!

Also I thought I would share a few pictures from the trip.

Since the ship was leaving from Port Canaveral in Florida, we took advantage and went a day early so we could go to The Wizarding World of Harry Potter! It. Was. Phenomenal. We went to Hogwarts which was so amazing, ate lunch at Three Broomsticks and had Butterbeer with our meals. Honeydukes and Zonko's didn't disappoint either.

 The cruise ship was super nice, and the destinations even better! We went to Coco Cay, St. Thomas, and my favorite, St. Maarten.
 See the beach pictured below? It's as perfect as it looks. I want to live on that beach. Under an umbrella. Forever.

 

We had fun playing dress up for the formal nights.


One of which we decided to go retro, Kumi wearing one of her grandma's "cruise dresses" and me wearing my mom's party dress she got in the 80's.

 The day we got off the ship we had time to kill before our flight so we took an Airboat tour of the swamps in Christmas, Florida. 
We saw some huge gators and other fun swampy wildlife and it was so beautiful out there. Then after we had the option of holding a baby gator. I decided to hold the cute cuddly one.

    1. I usually just wing it so the proportions might not be exact but I usually do 3/4 to 1 cup milk, 1 frozen banana, 1 or 2 Tbsp of peanut butter and two big handfuls of spinach! Enjoy!

  4. Thats such an awesome idea to do the shopping first, and then make a meal plan. I always think it would be beneficial to follow a meal plan but then I feel like I end up buying a million ingredients and never use them all!
