Peanut Butter Banana Stuffed French Toast

This recipe is as simple as making a peanut butter banana sandwich and then dipping it like you would a normal piece of bread into french toast egg mixture and you end up with the most delicious party-in-your-mouth breakfast ever. But I will still share with you my recipe because it's so good and I feel like I have finally learned the secret to good french toast!

Group 1
Four pieces of any bread. I usually use whole wheat and but if I've planned ahead I use French bread or Texas Toast. It's all good.
One banana
Peanut Butter

Group 2
4 eggs
1/2 cup milk
2 Tsp Sugar
1 Tsp Vanilla Extract
Cinnamon to taste

With the first group of ingredients make a peanut butter & banana sandwich. Whisk the second group of ingredients together in a shallow bowl. Heat your pan or griddle to medium and use your cooking spray.  I have learned that when dipping your bread/sandwich in the egg mixture it is best to leave it for about four seconds and then flip it over, repeating the four seconds, and then plopping it on the pan. This gets it just soaked enough but not soggy. When it looks right, serve it with some extra banana slices, home-made maple syrup and maybe a dusting of powdered sugar. Enjoy!
