Most of the recipes are post on this blog have a few things in common, one of those being that they are usually cheap to make. Admittedly, this is not the cheapest salad on the block, but it is oh so delicious. I usually save this one for special occasions.
What you'll need:
1 bag baby spinach
1 head romaine lettuce
2 roma tomatoes
1-2 mangoes
1 avacado
1 bunch green onion
1 yellow or orange pepper
4 pieces bacon crumbled or a bunch of bacon bits
feta cheese to taste
Dressing:
1 large lemon
sea salt
olive oil (about two tablespoons)
Cut and wash all ingredients and add to salad. Drizzle olive oil over salad. Squeeze lemon over salad, then sprinkle with sea salt. Toss thoroughly until well covered. *Don't add dressing until right before serving, the dressing makes the salad wilt a bit.
