Okay, so I had another post planned for you all today, but then I hadn't put it up yet, and I decided to make myself a sandwich real quick before I did. I wanted grilled cheese but we didn't have any cheddar around. I did have mozzarella, so I decided I'd try it. Then just for kicks I thought I would add a couple of extras to it, since I was already going non-traditional. Best. Sandwich. Ever.
So here is how you can make the divine sandwich that is now going to be my go-to lunch for many moons. It's simple, cheap and delicous. All of my favorite things.
2 slices 100% Whole Wheat Bread (I used Sara Lee- Rich & Hearty)
A few slices of mozzarella cheese
A handful of spinach leaves
One small avocado
First, heat your frying pan, griddle, George Foreman or waffle maker to medium heat. Then butter your slices of bread or drizzle a little olive oil on them. Then on the first un-buttered side slice up some avocado and cover it. On the second lay your spinach leaves and in then top with your cheese slices. Press together using both hands to hold either side of the sandwich. This may be tricky because avocado is slippery. Then grill to your liking. You are going to love this. I am toying with the idea of adding some pesto, because it too is green, and it would be lovely I'm sure.
This experience has made me want to experiment more with grilled cheese. Do you have a favorite? (aside from the classic cheddar in between two slices of white bread- because we already know that's delish.) I'd love to hear!







Even though it's become somewhat common now, I love what they call "grown up grilled cheese" at a lot of places. It's a regular grilled cheese with bacon and tomato. Super duper yummy!

ReplyDeleteI like Sicilian peppers (basically caramelized peppers and onions with capers and olives) with provolone for my grilled cheese :) Super tasty.
That sounds wonderfully amazing. If only avocados were cheaper... My current favorite is Swiss cheese and tomato on sour dough bread. Especially if you happen to have an heirloom tomato. Mmmmm...
