Easy Sweet and Sour Chicken


You will love this recipe! As you guys know by now I am all about simple and affordable recipes that taste like they aren't either. Well, this sweet and sour chicken is one of my favorites. For a quick weeknight meal I serve it as pictured above with just rice and veggies. For a special occasion, it is fun to make with fried rice and some pot stickers for a healthier, homemade Chinese night!

Without further ado, the super easy recipe:


Chicken breasts (about 4-5 large or 8-10 small tenders)
1/2 jar apricot or peach preserves
1/2 bottle Catalina salad dressing
1 package dry onion soup mix

Grease your pan and put in frozen chicken pieces (of course it works with fresh chicken too. Just adjust back your cooking time). Whisk all sauce ingredients together and pour over your chicken. Bake at 350 degrees for 45 minutes (the thick, large chicken breasts take about 45 minutes in my oven, tenders will take less time. I just check every 15 minutes or so to make sure it doesn't overcook.)
