I have been searching forever for a good, freezable breakfast burrito recipe. The other day I stumbled across a recipe on this blog that looked good to me. What attracted me to the recipe originally was it's simplicity, because if' you've been following this blog you know that I love a recipe, craft etc that is wonderful and simple.
I wanted to change a few things, most notably that I like bacon instead of sausage. Just working with what I had on hand, and not wanting to make a ton (since it was a trial run) here is what I came up with.
Ingredients:
-6 tortillas
-7 eggs
-1/4 C. milk
-11 strips turkey bacon (I would have used regular bacon but this is just what we had on hand..)
-1 small bag hashbrowns
-cheese
-salt and pepper to taste
Add in milk, salt and pepper, and blend well. Bryce makes way better eggs than me, so naturally I had to enlist him to help...
While you are getting your egg mixture together your hash browns should be cooking. After you get those going, cook your bacon (I used microwaveable kind.. easy way out...again).
After I cooked my bacon and blotted it dry, I cut it into tiny pieces with kitchen scissors. I did this because I like to have a little bacon in every bite rather than having to gnaw on big hunks. Is this just me?
After hash browns are done, add in your bacon and your egg mixture and cook until eggs are done how you like them.
Then get your assembly station ready...
Place some of your mixture in the center of your tortilla, add some cheese, tuck in your sides and roll!
After your burritos are rolled, wrap them tightly in saran wrap and stick in freezer zip locks or another air tight container to freeze.
To defrost and warm, unwrap a burrito and microwave for 1 minute 30 seconds, then flip burrito and microwave another minute and 30 seconds.
Serve with sour cream, salsa, or however you like it best! I will fill this freezer. One recipe at a time :).

DeleteDo you have an idea as to what temperature to set an oven at and how long to keep them if you had to use an oven? My family doesn't have a microwave.
ReplyDeleteI would guess about 375 for 6-8 minutes. I am going to try it in the oven tomorrow then I can tell you more approximately! It would probably be really yummy to add some cheese the last few minutes too if you are doing it this way. Everything tastes better re-heated or cooked in an oven anyway! DeleteOkay so I pulled my burritos out the night before and stuck them in the fridge to thaw overnight and the above time worked perfect! (I just put them right on the rack, and flipped over after 4 minutes). However, if you can't pull them out to thaw the night before then it will probably take more like 20 minutes at 375, but you could mess with it a bit and see! Hope this helps.
