One of the best things for a budget is planning ahead. When you have a menu plan you spend less at the grocery store and you are way less likely to go out mid week because you don't have time or energy to make something. At least for me, picking meals is the hardest part of the whole dinner process by far.
Another thing that I have had to come to terms with since we started budgeting is that every dinner does not have to be a 5 star meal. Sandwiches count. While no one may pick them as their favorite, if you make them, everyone will get full and happy. It has really helped take the stress off of meal planning, for me to just simplify a little.
Here is my menu for this week:
We have breakfast for dinner every Thursday. I love breakfast for dinner and this has been a fun tradition for us. We switch up which breakfast we have each week. This week will be country breakfast, ie: bacon, eggs, hash browns, oranges and biscuits.
I only plan out detailed dinners. For breakfasts we rotate every week between oatmeal, eggs, cereal and smoothies. For lunch we usually rotate between leftovers, sandwiches, wraps and salads. I just keep all of these things on hand because we eat them so frequently.
I will post pictures and recipes later in the week because a few of these are go-to recipes for us. (Here is my favorite fruit smoothie recipe in case you missed it.) That way you can use this weekly menu for next week if you want to try it out!

I like your take on St.. Patrick's day dinner! I always like corned beef but Jacob can't even smell it or he'll be sick... So sad! I will have to try this instead!
