So, last week was my Spring Break, I had five whole days off of school! I told myself I was going to get SO much stuff done, and I made a checklist to make sure I remembered to do everything I wanted to. Well, it's Monday and I am wondering where those five days went. I still worked, so I didn't actually have the week completely off but it still flew by too fast and I don't feel like I was nearly productive enough. Is it just me, or does that happen to you guys too? Anyway, after work today I decided to stop by Sunflower Market because I wanted to get some lettuce and spinach, and their produce is the best. Turns out they are having a sale on Strawberries! I love this time of year! They are about 1.25/lb. I got five pounds because they just looked and smelled phenomenal. I also picked up a bunch of other produce, and some oats and eggs.
I paid $15.17 for ALL of this:
5 lbs. strawberries
1 lb. quick oats
This leaves me about five more dollars for groceries this week which is just enough for some frozen chicken (a staple in this home.) I am so excited for how good we'll be eating this week! Here is my tentative meal plan:
Monday: Strawberry crepes, perhaps? I have to partake of this delicious fruit ASAP.
Tuesday: I was already planning on trying the biscuit recipe Jessica shared a few days ago, and making some home-made white gravy to go with it. Any other suggestions to go along?
Wednesday: Plantains, guacamole & fajitas.
Thursday: Pizza night
Friday: Date night
Saturday: BBQ Chicken Salad
Some of my tentative plans also include freezing some strawberries and bananas for later use in smoothies and other concoctions.
