Okay, so maybe to some of you this might sound like blasphemy but I totally hate deviled eggs. The regular kind. With the pickles. And the mustard. Those are two things that I can't stand, but last year for Easters I was put in charge of bringing the deviled eggs to dinner with Jacob's family. I decided that I would make the traditional ones, because that's what everyone likes, but I also wanted to find a recipe that I could enjoy as well. Here it is kids. My favorite food- avocado, in deviled eggs! Make a lot- because they are so good everyone will be wanting seconds and thirds.
How to make them:
6 hard boiled eggs
1 medium avocado, diced small
3 tablespoons mayonnaise
2 teaspoons freshly squeezed lemon juice
1/8 teaspoon garlic powder
Cayenne pepper or paprika, to taste
Salt to taste
Slice your hard boiled eggs in half lengthwise and scoop out yolks. Mash yolks and avocado together with a fork, stir in mayo, lemon juice, garlic powder, cayenne pepper, and salt to taste. Fill your empty egg whites with yolk mixture and place on a serving plate. Sprinkle with cayenne or paprika.
Tip: Prepare these just before serving, because avocados will turn dark, I totally don't care about that, tastes the same! But you never know with guests...

ReplyDeleteIt was a wedding gift from my mom, it's from Anthropologie! I totally love it. I don't know about the stitching, I'm sure it could be though. Maybe that would be a fun DIY?!
DeletePickles in a deviled egg? That may be why you hate them. lol I have never heard of them made with pickles. However I just might have to try to avocado version, since it's the season for avos. :]
